Blueberry Avocado Yoghurt (raw, dairy free)

We (me and my friend Karoliina) made this dreamy blueberry avocado yoghurt at our Rawfood Breakfast during the Restaurant day (17.5.2014) in Helsinki. I absolutely love this “yoghurt”! The taste of blueberries and the creamy consistency of avocado, sweetened with dates and the freshness of lemon. Everything in perfect symphony.

Blueberry Avocado Yoghurt (raw, dairy free)

Yield: 2 portions

Ingredients

  • 2 ripe avocados

  • 2 dl frozen blueberries

  • 2 Tbsp chia seeds

  • (2 Tbsp soaked cashew nuts, optional)

  • 4 dates, pitted

  • 1 lemon, zest and juice

  • 1 tsp vanilla powder or vanilla extract

  • tiny pinch of sea salt (Celtic)

Preparation

  1. Blend all ingredients in a high speed blender until smooth.

  2. Serve with almond milk, hemp seeds and goji berries. You can make two portions and store the other half in the fridge, it will taste amazing the next morning, too.
